I am a Foodie...?

I believe I became a Foodie over time. Now, looking back I know now that I have always enjoyed foods that had stacked flavors.

Most of my favorite dishes are layered:
Such as French Onion Soup, Shepherd's Pie, Chicken Pot Pie, Italian Wedding Soup, Burritos, Quesadillas, Grilled Cheese Sandwhiches and My Sister's Taco Casserole thingy...

But it basically started with my brother.
We used to make simple homemade pizza from just one slice of bread, a little dab of tomato sauce and one slice of american cheese. There you have it, you had a small slice of toaster oven bliss.

I am always interested in developing new recipe ideas, such as the tres leches brownie and buffalo chicken meatloaf. I would like to take a traditional comfort food like chicken parm and turn that into a great tasting and juicy meatloaf just because chicken breast gets a bad wrap for being dry. I am always adapting recipes and making them my own by reinventing the their overall concept design to appear different but maintaining the same flavor profiles. It is fun trying out new techniques and figuring out how to make old favorites into new creations.

Build a Croissant Egg Bite Sandwhich with slices of smoked gouda cheese and the egg bite itself.

Mini Egg Bites
Stove Top & George Foreman Grill

1: Set Stove Top and Grill to Medium Heat.
2: I filled each section of the the pan (3 1/2 inches wide) with Broccoli, Tomatoes and Black olives slices, of course making sure to leave some room for the eggs and cheese.
3: Add 1 scrambled egg to each section and stir well so that the egg is properly distributed around all the ingredients.
4: Mix in some shredded cheese.
5: Cook on stove top until everything is cooked except the top middle.
6: Put pan in the grill to top off your eggs, about 4 minutes should do the trick.
(Check it though, it should all look solid now.)

Mini Egg Bites in the Oven

May I suggest using the 12 muffin pan because it might be a close match to depth that I am using. These Egg Bites will be more bite sized than mine where.

1: Preheat oven to 300
2: You can fill in as many sections of the pan as needed with Broccoli, Tomatoes and Black olives slices of course making sure to leave some room for the eggs and cheese.
3: Add 1 scrambled egg to each section that you are using and stir well so that the egg is properly distributed around all the ingredients.
4: Mix in some shredded cheese.
5: Baking for 8 to 10 minutes should do the trick.
(Check it though, it should all look solid now.)
Enjoy! Mangia!
